Banana & Maple Muffins

I haven’t baked for AGES so thought I’d get back involved. I’ve been going through my cookbooks lately (since I’ve started planning my meals) and have found loads of recipes I want to try and loads I’d forgotten about!

I found the following recipe in a book I got from my sister-in-law for my birthday last year:-

This is full of loads of lunch ideas and I’ve used it a fair bit. I’d never tried this recipe though and I had pretty much all of the ingredients so I gave it a go.

The ingredients are as follows:-

  • 110g Softened Butter
  • 225g Caster Sugar
  • 4 Ripe Bananas
  • 2 Eggs
  • 1 tbsp. Maple Syrup
  • 50g Porridge Oats
  • 225g Self-Raising Flour

First things first, cream together the butter and sugar. I did this without the use of a machine (I actually prefer doing things manually!) so because it takes some time I just did it while watching the telly. Once done, it should look like this…

In a separate bowl, mash the bananas up

Add the bananas to the butter/sugar mix along with the eggs, oats and maple syrup.

Mix this well, then add the flour and fold carefully – basically the second you can’t see anymore flour, it’s done – DO NOT OVER-FOLD! It should look something like this…

Again this isn’t the most appealing consistency or look, but it did smell nice!

The recipe said it was enough for 12 muffins. I must have really small muffin tins because it was enough for 18 decent-sized muffins! Spoon the mixture into the muffin cases…

The oven should have been pre-heated to 180C / Gas Mark 4. Put the trays in the oven for around 35 minutes. Keep an eye on them though! I used this timing but I think my oven was slightly too hot because I over-cooked the muffins slightly (eek!)

I let these cool for a while and then took them out of their cases. I have to say they were very tasty and very moreish! I’m just hoping they freeze well (since I have so many) so I don’t have to eat them all in a couple of days…
